How to make cheesecake filled strawberries

Step one: Clean your strawberries, cut off the top green leaves, and then hollowed them out. I prefer to hollow them out using a paring knife.

Step two: Combine softened cream cheese, strawberry preserves, vanilla, and powdered sugar and mix together until smooth.

Step three: Stuff the strawberries! I use a teaspoon measuring spoon as it is small and allows me to place the cream cheese easier farther down in the strawberry. Then dip the top into the graham crackers.

Ingredients
 

  • 1 lb. strawberries
  • 4 ounces cream cheese softened
  • 1 tablespoon strawberry preserves or jam
  • 1/4 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 2 graham cracker sheets crushed into crumbs

Instructions
 

  • Rince and dry strawberries. Hull the strawberries and then hollow out the inside. I carefully complete this step with a small paring knife.
  • In a medium sized mixing bowl place the cream cheese, powdered sugar, vanilla, and strawberry preserves.
  • Mix together with a spoon or silicone spatula until smooth.
  • Fill the strawberries with the cheesecake filling. I use a teaspoon measuring spoon as it is small and easier to fill the strawberry with. You can also place in a Ziplock bag and clip the corner (as a piping bag).
  • Dip the top of the strawberry into graham cracker crumbs.
  • Place on a serving platter and enjoy!

Notes

Make sure cream cheese is softened to make the mixing easier.
If you don’t have graham crackers, you can crush up other cookies instead such as shortbread cookies or Oreos.
These are best enjoyed the day of making. Store in the refrigerator until ready to enjoy.
