One key to success with this recipe is finding high-quality strawberries. This can be a challenge in the winter, especially around Valentine’s Day when strawberries are popular, but not in season. Choosing strawberries that are ripe, flavorful, and large enough to hollow out is essential for the best results.

Ingredients and substitutions

- Strawberries: Buy ones that are ripe and large enough to hallow out the inside for the cheesecake filling
- Cream cheese: the base of the delicious cheesecake filling
- Powdered sugar: for the creamy cheesecake filling
- Strawberry preserves: You can also use strawberry jam or jelly.
- Vanilla: for delicious flavor
- Graham crackers: these are crushed up and add the perfect “crunch” to each bite. I’ve also swapped for crushed cereal such as cinnamon toast crunch, Oreos, or shortbread cookies.
How to make cheesecake filled strawberries

Step one: Clean your strawberries, cut off the top green leaves, and then hollowed them out. I prefer to hollow them out using a paring knife.

Step two: Combine softened cream cheese, strawberry preserves, vanilla, and powdered sugar and mix together until smooth.

Step three: Stuff the strawberries! I use a teaspoon measuring spoon as it is small and allows me to place the cream cheese easier farther down in the strawberry. Then dip the top into the graham crackers.
