Cucumber and Cream Cheese Sandwich (Heart Shaped)

These sandwiches are perfect to serve at your next gathering. Whether it be a Valentine’s Day tea, baby shower, or girls’ night. I got the idea for these open-faced sandwiches from a Christmas tea party my friend hosted. She served these sandwiches, but they were shaped as Christmas trees. The tea party was filled with the most delicious tea from her beautiful tea set. She also had a decadent spread of the most amazing foods – including the cute and festive open-faced cucumber and cream cheese sandwiches. These little tea sandwiches were a HIT and it got me thinking about making them Valentine’s Day themed.
All you need for the recipe is a heart shaped cookie cutter, bread, cream cheese, and cucumber. The sandwiches are light and refreshing. They can be prepared ahead of time and stored in the fridge until you are ready to serve them.
Ingredients
- Whole wheat bread – I prefer using whole wheat bread simply for the added nutrients. Select your favorite bread and make sure each slice is large enough for your cookie cutter.
- Cream cheese – I used plain in this recipe, but other flavors would be delicious such as garden vegetable or chive and onion.
- Cucumber – The crunchy, delicious topping. I used a full sized cucumber that was thinly sliced.
- Lemon juice – this will be mixed in the cream cheese for a zesty, refreshing flavor.
- Fresh dill – another perfect flavor to add in the cream cheese.
How to make this recipe

Mix the cream cheese with fresh lemon juice and dill. Spread on the bread. You can see here I have the bread upside down. With the shape of the bread and the shape of the cookie cutter, this allowed the cookie cutter to not go off the sides.

Press down firmly. I like to remove the edges while the cookie cutter is still on the bread.

.Place cucumber’s on top of the bread. There are several different designs you can do. If you look at the first picture in this blog, you will see several variations.

Substitutions
Cream cheese: You can use a flavored cream cheese such as garden vegetable or onion and chives. Hummus is another easy swap.
Cucumbers: Diced bell peppers, carrots, and tomatoes. I would dice them up small and sprinkle them on top.

Equipment needed
4.5 inch heart shaped cookie cutter. It will work if your cookie cutter is a bit smaller.
How to Store
If preparing the sandwiches ahead of time – place on a serving platter and cover with plastic wrap. Store in the fridge until ready to serve.
Tips for Success
I placed my cookie cutter upside down on the bread to fit on the bread easier.
Try to slice your cucumbers thinly. This will help them “stick” on the sandwich better.

Cream Cheese and Cucumber Sandwich (Heart Shaped)

Ingredients
- 10 slices whole wheat bread
- 8 ounces cream cheese slightly softened so it's easier to mix and spread
- 1 large cucumber
- 1 ½ tablespoons lemon juice
- 2 teaspoons fresh dill
Instructions
- Peel the cucumber and then thinly slice it. Slice each piece of cucumber in half. Set aside.
- In a medium bowl, combine cream cheese, lemon juice, and fresh dill. Mix together until well combined.
- Cover 1 side of each piece of bread with cream cheese.
- Press the heart shaped cookie cutter firmly down on the bread and remove excess sides.
- Place cucumbers on top of the bread. There are several different variations of how to place them on the bread. See the different designs in the first photo at the top of this post.

Cream cheese and cucumber sandwiches are so good! I love adding sprinkle of dill over these as well.
