How to make this recipe

Brown ground beef in a skillet. About 2 minutes into cooking the ground beef, add the diced onion and carrots. Cook until ground beef is no longer pink. Drain excess grease.

Add ginger and garlic and cook 1 minute. Add in 3 tablespoons of soy cause and bag of coleslaw. Cook until the coleslaw is tender and soft.
This recipe is delicious served over white/brown rice, cauliflower rice, or quinoa!

Soy sauce -> Coconut aminos (if you are following whole30 or working to avoid soy)

- 1 lb. ground beef (can sub for ground turkey or chicken)
- 1 bag (16 oz.) coleslaw mix
- 1 cup carrots sliced thinly
- ½ yellow onion diced
- 1 teaspoon ground ginger
- 4 tablespoons low sodium soy sauce divided
- 2 teaspoons garlic minced
- Optional: Rice, quinoa, or cauliflower rice to serve it over
Instructions
- In a large skillet over medium high heat, begin to brown ground beef, breaking it into small bits as it cooks.1 lb. ground beef
- About 2 minutes into cooking ground beef, add the carrots and onion to sauté and soften1 cup carrots, ½ yellow onion
- Cook until the ground beef is no longer pink and carrots have softened a bit
- Add ginger and garlic and cook 1 minute1 teaspoon ground ginger, 2 teaspoons garlic
- Add in 3 tablespoons soy sauce and bag of coleslaw. You may have to add the coleslaw in small portions and wait for some of it to cook down before adding more so it doesn't overflow the skillet.
- Cook for about 4 minutes, stirring frequently until the slaw is soft and tender.
- Serve in a bowl or plate and drizzle on remaining 1 tablespoon of soy sauce.
- Optional: Serve over rice, quinoa or cauliflower rice
