Egg roll in a bowl is a fast, flavorful, and healthy dinner option. It is prepared in less than 30 minutes and stuffed full of ground beef, vegetables, and flavorful spices.
1lb.ground beef(can sub for ground turkey or chicken)
1bag (16 oz.)coleslaw mix
1cupcarrotssliced thinly
½yellow oniondiced
1teaspoonground ginger
4 tablespoonslow sodium soy saucedivided
2teaspoonsgarlic minced
Optional: Rice, quinoa, or cauliflower rice to serve it over.
Instructions
In a large skillet over medium high heat, begin to brown ground beef, breaking it into small bits as it cooks.
1 lb. ground beef
About 2 minutes into cooking ground beef, add the carrots and onion to sauté and soften
1 cup carrots, ½ yellow onion
Cook until the ground beef is no longer pink and carrots have softened a bit
Add ginger and garlic and cook 1 minute
1 teaspoon ground ginger, 2 teaspoons garlic
Add in 3 tablespoons soy sauce and bag of coleslaw. You may have to add the coleslaw in small portions and wait for some of it to cook down before adding more so it doesn't overflow the skillet.
Cook for about 4 minutes, stirring frequently until the slaw is soft and tender.
Serve in a bowl or plate and drizzle on remaining 1 tablespoon of soy sauce.
Optional: Serve over rice, quinoa or cauliflower rice

Optional toppings: Creamy sriracha sauce, green onions, sesame seeds, French fried onions.Store in an airtight container in the refrigerator for up to 4 days.
