Egg Roll in a Bowl

Egg roll in a bowl is a fast, flavorful, and healthy dinner option. It is prepared in less than 30 minutes and stuffed full of ground beef, vegetables, and flavorful spices.

Equipment

1 cutting board

Ingredients
 

  • 1 lb. ground beef (can sub for ground turkey or chicken)
  • 1 bag (16 oz.) coleslaw mix
  • 1 cup carrots sliced thinly
  • ½ yellow onion diced
  • 1 teaspoon ground ginger
  • 4 tablespoons low sodium soy sauce divided
  • 2 teaspoons garlic minced
  • Optional: Rice, quinoa, or cauliflower rice to serve it over.

Instructions
 

  • In a large skillet over medium high heat, begin to brown ground beef, breaking it into small bits as it cooks.

  • About 2 minutes into cooking ground beef, add the carrots and onion to sauté and soften
    1 cup carrots, ½ yellow onion
  • Cook until the ground beef is no longer pink and carrots have softened a bit
  • Add ginger and garlic and cook 1 minute
    1 teaspoon ground ginger, 2 teaspoons garlic
  • Add in 3 tablespoons soy sauce and bag of coleslaw. You may have to add the coleslaw in small portions and wait for some of it to cook down before adding more so it doesn't overflow the skillet.
  • Cook for about 4 minutes, stirring frequently until the slaw is soft and tender.
  • Serve in a bowl or plate and drizzle on remaining 1 tablespoon of soy sauce.
  • Optional: Serve over rice, quinoa or cauliflower rice

Notes

Optional toppings: Creamy sriracha sauce, green onions, sesame seeds, French fried onions.
Store in an airtight container in the refrigerator for up to 4 days.
