Rince and dry strawberries. Hull the strawberries and then hollow out the inside. I carefully complete this step with a small paring knife.
In a medium sized mixing bowl place the cream cheese, powdered sugar, vanilla, and strawberry preserves.
Mix together with a spoon or silicone spatula until smooth.
Fill the strawberries with the cheesecake filling. I use a teaspoon measuring spoon as it is small and easier to fill the strawberry with. You can also place in a Ziplock bag and clip the corner (as a piping bag).
Dip the top of the strawberry into graham cracker crumbs.
Place on a serving platter and enjoy!

Make sure cream cheese is softened to make the mixing easier.If you don't have graham crackers, you can crush up other cookies instead such as shortbread cookies or Oreos.These are best enjoyed the day of making. Store in the refrigerator until ready to enjoy.
