There is nothing better on a cold day than a cozy bowl of soup. This recipe is a go to in our family for an easy weeknight dinner recipe. It is a one pot recipe and only takes 30 minutes to make. This is a huge WIN when you need a fast dinner.

The ingredients are very flexible. I’m using red potatoes since we were gifted a bunch, but any kind works! Add spicy sausage for heat or heavy whipping cream for extra richness.

This kid-approved soup is hearty and perfect with sourdough on the side. The ingredients in this recipe are simple, fresh, and healthy. And did I mention – so tasty?? You will want to add this recipe to your normal dinner rotation.

Ingredients and substitutions

  • Ground pork sausage: I typically use a mild sausage as my kids are eating it, but a spicy sausage would also be delicious.
  • Gluten free beef broth: Swap for chicken or vegetable broth. Looking for a more nourishing option? Use this homemade bone broth!
  • Spinach: Added at the very end for some extra nutrition. Kale can also be used.
  • Yellow onion: Great flavor!
  • 4 medium red potatoes: I have also made this recipe with yellow potatoes or russet potatoes.
  • Unsweetened coconut milk: This is added at the end to add some creaminess. Can swap for milk, half and half, or heavy whipping cream based on the level of creaminess you want.
  • 2 cloves garlic

How to prepare sausage, potato, and spinach soup

Step 1: Brown the onion and sausage. Chop the sausage into large pieces as you cook.

Step 2: Add garlic and cook 1 minute until fragrant. Add beef broth and potatoes. Bring to a boil then reduce to simmer for 10-15 minutes until potatoes are tender and can easily be pierced with fork.

Step 3: Add in spinach and coconut milk and cook for 1-2 minutes until spinach is wilted. Mash some of the potatoes to make the soup a thicker consistency. Enjoy!

Frequently Asked Questions

What type of potatoes can I use?

Any will work! Yukon, russet, etc. I used red potatoes as I had those on hand. I do recommend peeling them for this recipe.

What type of coconut milk to use?

I used the brand “So Delicious, Dairy Free Organic Coconut Milk.” Most grocery stores should carry this in their dairy section. You can also used canned coconut milk, but only use unsweetened.

What can I sub for coconut milk?

Half and half or heavy whipping cream makes it more creamy if you aren’t needing the soup to be dairy free.

Can I make this ahead of time?

Yes! This soup reheats beautifully. Store it in an airtight container in the fridge for up to 3–4 days. To reheat, warm on the stovetop over low heat, stirring occasionally (you may want to add a splash of broth or water if it’s too thick).

Can I freeze it?

Absolutely. Let the soup cool completely, then transfer to freezer-safe containers or heavy-duty freezer bags. Freeze for up to 2–3 months. Thaw overnight in the fridge, then reheat gently.

Can I make this vegetarian?

You can! I’d swap the sausage for beans and add some extra vegetables like mushrooms or squash. Use vegetable broth instead of beef broth!

Ingredients
 

  • 1 lb. ground sausage
  • 4 cups low-sodium beef broth or beef bone broth
  • 4 cups fresh spinach
  • ½ cup yellow onion diced
  • 4 medium red potatoes peeled and cubed
  • 1 cup unsweetened coconut milk
  • 2 teaspoons garlic minced
  • 1 tablespoon olive or avocado oil

Instructions
 

  • Heat oil in a large pot or Dutch oven over medium heat.

  •  Add diced onion and ground sausage and cook until meat is no longer pink. Break into chunks as you cook. Drain excess grease.
    ½ cup yellow onion, 1 lb. ground sausage
  • Add garlic and cook about 1 minute until fragrant.

  • Add beef broth and potatoes.
    4 cups low-sodium beef broth, 4 medium red potatoes
  • Bring to a boil then reduce to simmer for 10-15 minutes until potatoes are tender and can easily be pierced with fork.
  • Add in spinach and coconut milk and cook for 1-2 minutes until spinach is wilted.
    4 cups fresh spinach, 1 cup unsweetened coconut milk

Notes

Add medium or spicy sausage to add some heat.
Sub coconut milk with milk or heavy whipping cream if you want it to be creamier and do not need it to be dairy free. 
Allow to cool and store in refrigerator for up to 3-4 days. You can also freeze for up to 3 months.
