When you’re craving something hearty, healthy, and full of flavor, this sausage, potato, and spinach soup is the one to make! It’s cozy, satisfying, and always disappears fast in my house.
Heat oil in a large pot or Dutch oven over medium heat.
1 tablespoon olive or avocado oil
Add diced onion and ground sausage and cook until meat is no longer pink. Break into chunks as you cook. Drain excess grease.
½ cup yellow onion, 1 lb. ground sausage
Add garlic and cook about 1 minute until fragrant.
2 teaspoons garlic
Add beef broth and potatoes.
4 cups low-sodium beef broth , 4 medium red potatoes
Bring to a boil then reduce to simmer for 10-15 minutes until potatoes are tender and can easily be pierced with fork.
Add in spinach and coconut milk and cook for 1-2 minutes until spinach is wilted.
4 cups fresh spinach, 1 cup unsweetened coconut milk
Mash some of the potatoes to make the soup a thicker consistency.
Add salt and pepper to taste. Serve and enjoy!
Notes
Add medium or spicy sausage to add some heat.Sub coconut milk with milk or heavy whipping cream if you want it to be creamier and do not need it to be dairy free. Allow to cool and store in refrigerator for up to 3-4 days. You can also freeze for up to 3 months.
