Chocolate Filled Strawberries (Bite-Sized Bliss!)

These chocolate filled strawberries are beyond delicious. Stuffed with a rich chocolate cheesecake filling and drizzled with white chocolate, they make for a simple yet decadent no-bake dessert.

You will love this twist on the traditional chocolate dipped strawberries, but instead stuffing them with a chocolate filling. This dessert has the best complementary flavor with the fruity flavor of strawberries and the creamy chocolate. They are perfect to serve at a Valentine’s Day party, preparing a game day treat, Mother’s Day, baby shower, or any special occasion!

I prepared these chocolate filled strawberries for a book club I attended. They were thoroughly enjoyed and not a single one made it home. I prepared them a few hours ahead of time and stored them in the fridge covered in plastic wrap. They traveled well and just required me to place some of them upright when I arrived as they had fallen over.

Ingredients

  • Strawberries: I recommend strawberries that are ripe and large enough to hallow out the inside for the chocolate filling.
  • Cream cheese: the base of the delicious cheesecake filling.
  • Powdered sugar: to mix with the cream cheese for added sweetness.
  • Cocoa powder: For the chocolatey goodness.
  • White chocolate candy melts: to drizzle over the top. This is optional, but I highly recommend as they look beautiful.

How to make chocolate stuffed strawberries

Clean your strawberries, cut off the top off the strawberry AND the bottom so they can stand upright.

Next, hollow them out using a pairing knife.

Mix the chocolate filling together in a medium sized bowl. Place the chocolate filling in a Ziploc bag (or a piping bag if you have one). Clip a small corner off the Ziploc bag and squeeze the filling in a circular motion to fill the strawberry.

Melt your white chocolate melts in the microwave and then drizzle them over the top of the strawberries using a spoon.

I prefer to CAREFULLY use a small pairing knife.

You can use a piping bag if you have on hand. I always place the filling in a Ziploc bag and clip off the corner with scissors.

Substitutions

White chocolate melts: White almond bark. You could also crush up cookies such as short bread or oreos and sprinkle on top. You could also sprinkle on graham cracker crumbs.

Cocoa powder: You can swap for melted chocolate chips

How to store

Cover in an airtight container in the fridge until ready to serve. These are best served the day you prepare them.

Tips for Success

To stuff the strawberries with the filling: I use a Ziploc bag with a corner clipped off.
Cut off the bottom of the strawberry evenly so they stand up easily.

  • 1 lb. strawberries
  • 8 ounce cream cheese softened
  • ½ cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 5 ounces white chocolate candy melts or almond bark

Instructions
 

  • Rince and dry strawberries. Carefully using a pairing knife – Hull the strawberries and then hollow out the inside.
  • Cut a small portion off the bottom of the strawberries so they can stand up when you serve them.
  • In a medium sized mixing bowl place the cream cheese, powdered sugar, and cocoa powder.
  • Beat together until soft and creamy (using a silicon spatula or a hand mixer on low speed).
  • Place cream cheese mixture in a Ziploc bag and cut off a small portion of the corner. Squeeze the mixture into strawberry using a circular motion.
  • Melt your white chocolate melts in the microwave and then drizzle them over the top of the strawberries using a spoon.
  • Using a spoon, drizzle melted white chocolate over top in a back and forth motion.

Notes

These are best prepared and served the same day. You can store them in an airtight container in the fridge if you make them a few hours ahead of time.
Other topping options: crushed Oreos, cookies, or graham crackers.
