Lives are busy and schedules are hectic; this is why 30-minute meals (or less) are so helpful. In my current season of life, I have a one-month-old, so fast and nutritious dinners are a must have.

One of the best parts of a taco stuffed sweet potato is the ability to customize. Everyone can fix their sweet potato to their liking. More ground beef? Great! Want a little spice? No problem, toss on some jalapeños!

Just like a taco, the toppings are endless! I included several options in this recipe but toss on any ingredients you have on hand. It’s a great recipe to clean out the fridge or pantry to not let food go to waste.

Ingredients in loaded taco sweet potato

  • Sweet Potato: Medium sized
  • Ground Beef
  • Taco Seasoning Pack: For the ground beef
  • Black Beans: Canned
  • Lime juice: to add in with the black beans
  • Cheddar Cheese
  • Sour Cream
  • Avocado
  • Salt & Pepper
  • More options: cilantro, bacon, diced tomatoes, salsa, guacamole, corn, or jalapenos

How to make a taco stuffed sweet potato

Microwave your sweet potatoes: Place the sweet potato directly into the microwave (no plate) and microwave for 5-10 minutes based on the size. Mine required about 8 minutes. You know they are cooked when you can pierce the potato easily with a fork.

Prep your ground beef: While the sweet potatoes are in the microwave, cook your ground beef over medium high heat. Break it into small pieces while cooking. Drain excess grease and then follow the directions on the taco seasoning packet to season your meat.

Prep your black beans: Place in a small saucepan and squeeze in lime juice. Heat in a small saucepan over medium heat for about 4 minutes.

Top your potato: Pile on the toppings and enjoy!

FAQ and Substitutions

Sweet Potato – You can easily swap for a russet potato. I completely understand there may be some in your household who do not like sweet potatoes! I discovered my 2-year-old greatly dislikes sweet potatoes with this meal. Next time I will pop in a russet potato in the microwave for her.

Ground Beef – Ground turkey or ground chicken

Black Beans – Kidney or pinto beans

Cheddar Cheese – Pepper jack or Mexican style cheese would be great options

How I served this to my toddler and preschooler

Toddler and preschool plate with sweet potato, taco meat, black beans, avocado and cheese seperated

My kids always prefer their meal separated and tend to eat more this way!

More 30-minute meals

Here are more quick dinners in 30 minutes or less!

Storing a loaded sweet potato

You can store in an airtight container in the fridge for up to 4 days. It easily microwaves to reheat. I would avoid microwaving the sour cream or avocado.
