How to Make Blueberry Syrup

Step one: Combine 1 cup of blueberries, maple syrup, vanilla, and lemon juice in a medium saucepan.

Step three: Add the remaining 1 cup of blueberries and simmer an additional 4 minutes. Pull off heat and allow to cool and thicken.

This makes such a delicious pancake topping! I often don’t even add the maple syrup and let the blueberries sweeten it by themselves. Though when I do this my husband usually proceeds to add maple syrup himself lol!
