This homemade blueberry syrup comes together in just 10 minutes using frozen blueberries and real maple syrup. It's perfect for pancakes, waffles, French toast, oatmeal, yogurt, cheesecake, and ice cream.
In a medium saucepan, add 1 cup blueberries, maple syrup, lemon juice, and vanilla.
Bring to a simmer over medium heat. Reduce to low heat and simmer for 3-4 minutes until blueberries are soft.
Add the remaining 1 cup of blueberries and simmer an additional 4 minutes.
Pull off heat. You can mash as many blueberries as you'd like.
Let it cool and thicken for a few minutes and then serve!

You can use frozen or fresh blueberries. If using fresh blueberries, reduce simmer time by about 2 minutes and add 1-2 tablespoons of water. Fresh will not release as much liquid when cooking so you will want to thin it out a bit.Make sure to keep the heat low to prevent the syrup from burning.The syrup will continue to thicken as it cools. You can add 2-3 tablespoons of water to thin it out.Storage: Allow the blueberry syrup to cool completely before transferring it to an airtight container or mason jar. Store it in the refrigerator for up to 1 week. It will thicken slightly as it chills, so simply stir it before serving or warm it in the microwave or on the stovetop if you'd like a thinner consistency.
