This recipe mixes together simple ingredients, is refrigerated for a few hours, then results in a creamy, chocolatey pudding that is protein packed. It is similar to my berry chia seed pudding, but a chocolate version! This recipe comes in my series of high-protein breakfast recipes without eggs. I create all egg-free recipes and am always looking for delicious ways to include protein for breakfast that don’t include eggs.

If you were wondering why you need to refrigerate for at least 4 hours – The chia seeds soak in the milk and yogurt to create a creamy base. As the chia seeds soak in this pudding, they enlarge and soften. Chia seed pudding takes on the sweet chocolatey flavor of the maple syrup and cocoa powder.

I love eating this for an easy grab and breakfast. It has about 25 grams of protein, which will vary based on the protein powder you use. You can grab any of your toppings – coconut flakes, mini chocolate chips, granola, or fruit to toss on the top. It is so versatile and such a lovely snack to enjoy.

  • Unsweetened Coconut Milk: I typically use the brand “So Delicious.” This recipe works with any dairy or nondairy milk.
  • Vanilla Greek yogurt: or sub for regular yogurt.
  • Chia seeds: high in fiber, amongst other benefits.
  • Unsweetened Cocoa powder: for the chocolatey flavor.
  • Maple syrup: for a bit of sweetness.
  • Chocolate protein powder: use your favorite protein powder you enjoy the taste of.

How to make chocolate chia seed pudding

Step one: Combine coconut milk, Greek yogurt, chia seeds, cocoa powder, maple syrup, and protein powder in a large bowl.

Step two: Mix all ingredients together. Cover and refrigerate for at least 4 hours. This allows the chia seeds to soften and absorb the liquid.

Step three: After it has been refrigerated, give it another good stir.

Ingredients
 

  • 1 cup unsweetened coconut milk or your favorite milk
  • 1 cup vanilla Greek yogurt or dairy free yogurt if needed
  • ⅓ cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup
  • 1 serving chocolate protein powder optional

Instructions
 

  • Combine all ingredients in a medium bowl and whisk together.
  • In an airtight container, store in the refrigerator for at least 4 hours. I prefer to make it the night before and refrigerate it overnight.
  • Remove from refrigerator and give it another good stir. Top with any toppings you'd like.
  • Enjoy!
