  • Strawberries: Buy ones that are ripe and large enough to hallow out the inside for the cheesecake filling
  • Cream cheese: the base of the delicious cheesecake filling

How to make cheesecake stuffed strawberries

Clean your strawberries, cut off the top green leaves, and then hollowed them out. I prefer to hollow them out using a paring knife.

Prepare your cream cheese filling in a medium sized mixing bowl. Stuff the strawberries! I use a teaspoon measuring spoon as it is small and allows me to place the cream cheese easier farther down in the strawberry.

Ingredients
  

  • 1 lb. strawberries
  • 8 ounce cream cheese softened
  • 2 tablespoons strawberry preserves or jam
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 3 graham cracker sheets crushed into crumbs

Instructions
 

  • Rince and dry strawberries. Hull the strawberries and then hollow out the inside. I carefully complete this step with a small paring knife.
  • In a medium sized mixing bowl place the cream cheese, powdered sugar, vanilla, and strawberry preserves.
  • Beat together until soft and creamy.
  • Fill the strawberries with the cheesecake filling. I use a teaspoon measuring spoon as it is small and easier to fill the strawberry with. You can also place in a Ziplock bag and clip the corner (as a piping bag).
  • Dip the top of the strawberry into graham cracker crumbs.
  • Place on a serving platter and enjoy!

Notes

Make sure cream cheese is softened to make the mixing easier.
If you don’t have graham crackers you can crush up other cookies instead such as shortbread cookies or Oreos.
Another fun addition is drizzling melted chocolate on top!
