It is filled with savory turkey sausage, roasted sweet potatoes, and crisp broccoli. This dinner makes for a perfect, low maintenance meal. As an added bonus, it is both gluten free and dairy free!

You know the feeling, dinner time rolls around, and you need something nutritious and low maintenance. Sheet pan meals check both of these boxes. This sheet pan sausage and vegetable meal is packed full of protein and healthy vegetables. All you need to do is some chopping, seasoning, and then you can let the oven do the hard work. The sweet potatoes are roasted to perfection and are full of antioxidants, fiber, and vitamins. Broccoli comes in waves in my household of being a “liked” veggie. Roasted broccoli is arguably one of the best ways to cook it. It comes out crisp and delicious and really takes on the flavor of its seasonings. My kids asked for seconds on the broccoli!

What turkey sausage should I use for the sheet pan meal?

The turkey sausage provides great protein. We purchased the Hillshire brand of precooked smoked turkey sausage. If you are looking for protein that is whole30 compliant, Applegate or Aidells are great brands to check out.

What I love about sheet pan sausage and vegetables

It requires little brain power and preparation! At the end of a long day (you never have those, right?!) preparing a sheet pan meal simplifies dinner and provides a variety of food options for those you are serving. This recipe is paired well with dipping sauces (ketchup, BBQ sauce, chick-fil-a sauce) for little ones to enjoy it more. If you don’t have one of the ingredients on hand, easily replace it with something else in your fridge.

Tips

Line your pans with parchment paper or aluminum foil for easy clean up.

Only place 1 layer of the food on your sheet pan. Spread out the sausage and vegetables evenly with some space between them. If the pan is overcrowded, the veggies will end up steaming and be more mushy instead of caramelizing and getting a crunchy texture.

FAQ and substitutions

Sweet Potatoes: Sub out for red potatoes, russet, yellow potatoes, etc. Just like the sweet potatoes, make sure you allow the potatoes to begin cooking before the vegetables

Broccoli: Replace with carrots, Brussel sprouts, zucchini or squash!

How long do leftovers last? About 4 days. It is best to be reheated on a skillet or in the oven. Microwave will work, but the vegetables may be mushy.

What to serve this with?

The great thing about sheet pan dinners is they truly do stand alone for a sufficient meal. It would pair well with a salad or rice though!

Ingredients
  

  • 2 medium sized sweet potatoes
  • 1 lb. smoked turkey sausage, precooked
  • 2 heads of medium sized broccoli
  • 4 tbsp. olive oil
  • 1 tsp. paprika
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 400 degrees and line 2 baking sheets with parchment paper
  • Peel and chop sweet potatoes into medium sized cubes
  • Toss with 2 tbsp. of olive oil, 1 tsp. paprika, 1 tsp. garlic powder, and 1 tsp. onion powder. You can do this in a bowl or directly on the cooking sheet. Spread evenly on the first baking sheet with some space between pieces (this will allow them to roast crispy and not steam mushy)
  • Roast sweet potatoes in the oven for 15 minutes
  • Chop turkey sausage and broccoli into medium sized pieces and toss with 2 tbsp. olive oil, 1 tsp. garlic powder, and 1 tsp. onion powder
  • Spread evenly on the second baking sheet
  • When the sweet potatoes have baked for 15 minutes you can add this second sheet pan into the oven and bake for 20 minutes
  • Flip the sweet potatoes, broccoli and sausage halfway through cooking
