  • Unsalted Butter
  • Unsweetened Coco Powder
  • Granulated Sugar
  • Milk – Whole, 1% or 2%
  • Lotus Biscoff Cookie Butter
  • Quick Oats
  • Vanilla Extract

Why Biscoff Cookie Butter?

Our family has tried many types of “peanut butter substitutes.” Many of them I enjoy such as almond butter or sunflower butter. However, for a sweet treat like these cookies, I do recommend giving the cookie butter a try. It is creamy, sweet and pairs perfectly in the cookie. If you like biscoff cookies, you will love this cookie butter version! 

How to make no bake cookies without peanut butter

Gather your ingredients and a medium sized saucepan 

Chop the 1 stick of butter into 1 tbsp. Segments. The butter can come straight from the fridge, no need to let it soften.

Add the butter, milk, sugar, and cocoa powder into the medium saucepan. You will begin melting it on medium heat until it comes to a rolling boil. Be sure to stir frequently to prevent burning. 

Once boiling, reduce heat to the lowest setting and simmer for 3 minutes, continuing to stir.

Once the 3 minutes is finished, add in the vanilla, cookie butter, and quick oats. Stir until combined and then drop immediately by spoonful onto lined cookie sheet. You can make them in a variety of sizes. This recipe creates 18 large cookies and 24 (2 dozen) smaller ones.

Allow to cool for 15-20 minutes. Enjoy!

What I love about this recipe

No bake cookies are a classic cookie and I have always enjoyed them. Since a peanut allergy diagnosis in my family, I didn’t anticipate finding a recipe I loved again until I started experimenting a bit. You can still enjoy this classic cookie in an allergen friendly manner!

Having the smell of cookies and an after dinner treat every now and again is such a special thing. This cookie is truly SO easy and quick. There is no need to let the dough set in the fridge and you don’t even need to turn on the oven for these peanut free no bake cookies. My kids were easily able to help me prepare. The hardest part was waiting the 20 minutes for them to cool and harden… we may or may not have lasted that long!

FAQ and substitutions

Can I freeze the peanut free no bake cookies? Yes, freeze in an airtight container for up to 6 months 

What type of milk can I use? I used whole milk. You can use 1-2% milk. To make this recipe dairy free try unsweetened and unflavored coconut, oat, or almond milk.

Substitution for cookie butter? Almond butter, Nutella, WowButter, or sunflower butter would all be great options.

Can I use old fashioned oats? Old fashioned oats need to be cooked longer so I recommend only quick oats.

Ingredients
  

  • 1 stick of butter (8 tbsp)
  • 2 cups of granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup whole milk
  • 1/2 cup Biscoff cookie butter
  • 3 cups quick oats
  • 2 tsp. vanilla extract

Instructions
 

  • Chop stick of butter into 1 tbsp chunks. Line 2 cookies sheets with parchment paper
  • In a medium sized saucepan place butter, sugar, cocoa powder, and milk
  • Melt on medium heat until it comes to a rolling boil, stirring frequently to prevent burning
  • Once boiling, reduce heat to lowest setting and simmer for 3 minutes, continuing to stir frequently
  • Add vanilla, cookie butter, and oats, stirring to combine
  • Drop immediately by spoonful onto cookie sheets (18-24 cookies)
  • Allow to cool approximately 20 minutes. Enjoy!
