Cookie Butter No Bake Cookies

These classic no-bake cookies are packed with delicious oats and rich Biscoff cookie butter. They're creamy, quick to prepare, and a total family favorite.

Ingredients
 

  • 8 tablespoons unsalted butter
  • 2 cups granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ½ cup whole milk
  • ½ cup Biscoff cookie butter
  • 3 cups quick oats
  • 2 teaspoons vanilla extract

Instructions
 

  • Chop stick of butter into 1 tablespoon pieces. Line 2 cookies sheets with parchment paper
  • In a medium sized saucepan place butter, sugar, cocoa powder, and milk.
  • Melt on medium heat until it comes to a rolling boil, stirring frequently to prevent burning.
  • Once boiling, reduce heat to lowest setting and simmer for 2 minutes, continuing to stir frequently.
  • Add vanilla, cookie butter, and oats, stirring to combine.
  • Drop immediately by spoonful onto cookie sheets.
  • Allow to cool and enjoy!

Notes

This recipe creates 18 large cookies and 24 smaller ones.
Since this recipe is a no bake recipe, I recommend using quick oats, not old-fashioned oats.
