Chop stick of butter into 1 tablespoon pieces. Line 2 cookies sheets with parchment paper
In a medium sized saucepan place butter, sugar, cocoa powder, and milk.
Melt on medium heat until it comes to a rolling boil, stirring frequently to prevent burning.
Once boiling, reduce heat to lowest setting and simmer for 2 minutes, continuing to stir frequently.
Add vanilla, cookie butter, and oats, stirring to combine.
Drop immediately by spoonful onto cookie sheets.
Allow to cool and enjoy!
This recipe creates 18 large cookies and 24 smaller ones.
Since this recipe is a no bake recipe, I recommend using quick oats, not old-fashioned oats.
