Kansas City Football Rice Krispie Treats

Let’s make some simple, fun, and Kansas City themed game day treats! These rice Krispie treats can easily be prepared at home and do not require expert baking or decorating skills. They are perfect to serve at your game day party. I included several different rice krispie designs you can pick from!

For this recipe, make the rice krispie treats first. They can be prepared in less than 15 minutes, but you do need to let them completely cool for about an hour. Once they have completely cooled, you can decorate with the melted chocolate and icing.

If you are a Kansas City football fan, you will love these recipes. I grew up in Kansas City and love rooting for my hometown team. Having special game day treats for the big game is fun and festive.

Ingredients

To make the base rice krispie treats:

  • Mini marshmallows: the binding agent in this recipe. Mini marshmallows will melt faster than full sized ones.
  • Unsalted butter: adds creaminess
  • Vanilla: adds delicious flavor
  • Rice cereal: this goes by several names including rice krispie, puffed cereal, crispy rice cereal 
  • Unsweetened cocoa powder and semi-sweet chocolate chips: for the delicious chocolate flavor!

For decorating

  • Chocolate Frosting: For the decorative hair
  • White almond bark: To dip the rice krispie treats in.
  • Red icing: For writing “15” or “KC”
  • Red, white, and gold sprinkles: an option for topping some of the rice krispie treats

How to make Kansas City game day rice krispie treats

  1. Line a 9 x 13 baking pan with parchment paper
  2. In a large pot melt butter on low heat. Add in marshmallows and stir frequently until melted.
  3. Add in vanilla and stir.
  4. Stir in rice cereal.
  5. Scoop out into the baking pan. Use a silicone spatula to GENTLY spread out the mixture. Try to not pack down the rice krispie treats or they will be dense and wont taste as good.
  6. Allow to cool for about 1 hour and slice into squares or use a knife to cut out the custom football shape.

For the #15 design

Dip the top half into melted almond bark. Allow it to dry (it dries quickly). Then write on them with red icing.

Place chocolate icing in a Ziploc bag. Clip a SMALL corner off the bag. Squeeze on the frosting to represent the hair.

How to make football rice krispie treats

With an oval cookie cutter (or free hand it with a knife). Cut out oval shapes. Place some of the white almond bark into a ziploc bag and squeeze the football laces design on top.

FAQ

The headband is white almond bark. I dipped the entire top of the rice krispie in the almond bark. Allowed it to dry, then used red icing to write on the numbers. I used chocolate icing (just the premade kind in a tub) for the iconic hair for number 15!

Store in an airtight container until you are ready to serve them. I would not recommend making these more than a day in advance or else they will become stale. Since the frosting gets easily smeared, you can’t individually wrap them.

I know there are food colorings (such as the brand Watkins) that are dye free, but I could not find any FROSTING that was dye free at my grocery store. If you are avoiding food dyes, I did write some of “KC” and “15” using cherry preserves (placed into a Ziploc bag with a corner clipped). And I was able to write on the rice krispies with them.

Substitutions

Almond bark: Can be swapped for chocolate candy melts.

Chocolate frosting: You can use small chocolate curls for the iconic hair instead.

Red frosting: I did make some with the “15” and “KC” using cherry preserves. I placed some in a Ziploc bag and clipped the corner. It worked well, just looked a bit different.

How to store

Store in an airtight container on the countertop. I do not recommend making these too far in advance or they will go stale.

Tips for Success

Allow the rice krispies to completely cool before cutting and decorating them. This will take about an hour. If not, they may fall apart.

  • 4 tablespoons unsalted butter
  • 6 cups puffed rice cereal also called crispy rice cereal
  • ½ teaspoon vanilla
  • ¼ cup cocoa powder
  • ¾ cup semi-sweet chocolate chips

For Decorating

  • 12 ounce white almond bark or candy melts
  • 4 tablespoons red, gold, and white sprinkles (optional if you want to decorate with them)
  • 8 ounces chocolate frosting
  • red frosting for writing the 15 and KC

Instructions
 

  • Line a 9 x 13 baking pan with parchment paper.
  • In a large pot melt butter on low heat. Add in marshmallows and stir frequently until melted.
  • Add in vanilla, cocoa powder, and chocolate chips. Stir until combined.
  • Stir in rice cereal.
  • Scoop out into the baking pan. Use a silicone spatula to spread out the mixture gently without packing down the rice krispie treats.
  • Allow to cool for about 1 hour.

For Decorating the #15 design

  • Melt white almond bark in the microwave in 30 seconds increments, stirring in between.
  • Dip the top half of the rice krispie treat into the white almond bark.
  • Once it has dried completely, use the red icing to write "15" or "KC".
  • Place chocolate frosting into a ziploc bag and clip a SMALL portion of the corner off.
  • Squeeze it onto the top of the rice krispie treat to represent the "hair".

For Decorating the football design

  • Using an oval cookie cutter, cut out the football shape.
  • Place white almond bark into a ziploc bag, clip the corner and draw on the football laces design.

Notes

Another optional design is simply drizzling white almond bark over a rice krispie square and using red, white, and gold sprinkles to decorate.
