Why I love this recipe

The main reason I currently love this recipe is due to my recent pregnancy cravings for wraps. I know its a bit of a strange craving, but chicken wraps always sound delicious. To save myself from driving through Slim Chickens multiple times a week, I have been on the search for easy and tasty wraps to make at home. This wrap has saved me a lot of money. Many wraps require a lot of individual ingredients and I wanted something that was simple and had enough protein to be filling. I love how fast the crispy chicken wrap can be assembled and bonus points for being an easy clean up. With how fast lunch time comes and goes, this is the perfect recipe to save time and money.

Ingredients in easy chicken lunch wrap

Salad mix – I used a sunflower bacon crunch salad. The crunch from the cabbage and sunflower seeds as well as the bacon and the sweet onion citrus dressing is very tasty. There are so many options based on what flavor and sauce you want. Whichever salad mix you end up getting, just make sure it includes salad dressing or else you will be eating a very dry wrap!

Tortilla – You will want a large/burrito sized tortilla to fit all the crunchy and creamy goodness.

Frozen chicken – Realgood Foods Co is the brand I used and I purchased it at Walmart. I like this brand as they are healthier than other store bought frozen chicken. You can actually recognize all the ingredients on the ingredient list. They are also gluten-free and keto-friendly. This brand does contain milk and eggs.

What to serve this with

Mix up some additional salad mix and serve that on the side! We have been loving sweet potato chips over here recently, or any type of chips really. Some additional options are fruit or veggies and dip.

Substitutions and FAQ

Salad Mix – Any mix can be used based on your flavor preference. I do know the mix I choose has egg within the salad dressing, so if an allergy exists be aware of that. If you have other lettuce on hand you can chop and pick a dressing of your choice. I enjoyed the simplicity of the dump and mix salad mix!

Frozen chicken – rotisserie chicken or grilled chicken could easily be used. If you shop at Costco the “Just Bare Lightly Breaded Chicken Breast Chunks” are amazing! This would be a great option as well and they truly taste like Chick-fil-a nuggets.

Can I microwave the chicken? The brand of chicken I used is not fully cooked so you need to bake it according to package instructions.

Can I prepare this ahead of time? Yes, you can make ahead and pack for a lunch on the go. If you are worried about it getting soggy, I recommend serving with the dressing on the side to dip

How to make an easy chicken lunch wrap

1. Get your chicken cooking first. If you get the brand Realgood Foods Co you will need to bake the chicken until an internal temperature of 165 degrees (15-17 minutes).

2. Toss the salad mix together.

3. Heat tortilla up for approx. 10 seconds in the microwave to make it easier to fold.

4. Add mix to the center of the tortilla, top with the amount of chicken you’d like, then roll it up. You can also add an additional squeeze of sauce on top if you want it creamier.

5. Cut in half or eat whole and enjoy! You can store for later just make it sure kept cold/refrigerated.

Ingredients
  

  • Bag of salad mix, dressing included (I used sunflower bacon crunch salad)
  • 4-5 frozen chicken pieces, cooked according to package directions
  • Flour tortilla. burrito or large size

Instructions
 

  • Cook chicken according to package instructions
  • Mix salad package (about 1 and a half cups worth)
  • Add salad mix into center of tortilla and top with cooked chicken
  • Drizzle additional salad dressing if you want it creamier
  • Fold, cut in half and enjoy!

Notes

Heat tortilla up for 10 seconds in the microwave to make it easier to fold
If eating later, store in airtight container. Keep salad dressing out in separate container to keep wrap from getting too mushy. You can simply dip into dressing when ready to eat later
