If you need a quick and tasty lunch, look no further! This southwest chicken wrap is protein packed, healthy, and prepared in only 5 minutes. You only need these THREE things – Tortilla, chopped salad mix, and rotisserie chicken.

Lunch always sneaks up on me and I love having this recipe in a pinch to get a quick and healthy meal in. The southwest chopped salad mix is filled with cabbage/lettuce, tortilla strips, and parmesan cheese and a chipotle ranch dressing. The dressing is the perfect tangy flavor with a bit of spice. I am pretty sensitive to spicy food, but this is just the right amount! Rotisserie chicken is a great source of protein, is healthy, and already cooked for you. We had rotisserie chicken for dinner the night before so the leftovers were perfect for this recipe. Roll up to tortilla to hold all of this creamy, crunchy goodness together!

Southwest Chopped Salad Kit: Aldi and Walmart both carry this salad (different brands). Other grocery stores will have similar ones!
Tortilla: Large or burrito sized
Rotisserie Chicken
How do you make an easy southwest chicken wrap?
In a separate small bowl, toss together about a cup of the salad mix.
Add a few pieces of rotisserie chicken (about 1/3 cup) on top of the chopped salad mix. If you want more dressing, drizzle a bit more on!
Roll up the tortilla and I like to stick a toothpick in to hold it together.
Just like that, lunch is ready!

Can I pack this wrap for on the go lunch? Yes, put the salad dressing in a separate container to pour on when you are ready to eat. It will likely get very soggy if not.
How spicy is the salad dressing? I would say it has a mild spicy flavor. Just a bit of kick to it
Can I make this recipe gluten free? Yes! omit the tortilla strips in the salad mix and use a gluten free wrap.

Everyone has their own definition of healthy, but yes I would say it is healthy. It is stuffed full of protein and vegetables. If you are looking for lower calories or low carb, use less salad dressing and a carb balance tortilla.
What to serve the wrap with
Mix up some additional salad mix and serve that on the side! We have been loving sweet potato chips over here recently, or any type of chips really. Some additional options are fruit or veggies and dip.

Southwest Chicken Wrap
Ingredients
- 1 cup southwest chopped salad mix (with a bit of the dressing mixed in)
- 1/3 cup rotisserie chicken (warmed)
- 1 tortilla (large or burrito sized)
Instructions
- In a separate bowl mix 1 cup of the salad mix together with about a tbsp. of the salad dressing
- Heat a tortilla in the microwave for 10 seconds
- Place the salad mix on the tortilla. Layer rotisserie chicken on top. Drizzle more dressing on if desired.
- Roll the tortilla up and enjoy!
