Have you ever attempted to make something fun out of pancake mix before? In the past, I have been the designer of some very strange looking smiley faces and hearts. This was before I realized you can place the pancake batter in a squeeze bottle to more easily make shapes or in this case letters and numbers!
I was looking for a fun back to school breakfast idea and these letter and number pancakes came to mind. For a special occasion, these are worth the extra step in the pancake making process!
How to make pancake letters
Create your batter
- Mix wet ingredients together in a large bowl (milk, melted butter, water, honey, and vanilla extract). Stir with a whisk until well combined.
- Next, in a separate medium sized bowl mix your dry ingredients together (flour, baking powder, and salt). Pour slowly into the wet ingredients and whisk together gently
- You want your batter to not be too runny that it spreads out way too much on the skillet or too thick that the inside won’t cook
Heat up your skillet or griddle
- Heat to medium heat. On the griddle I cooked mine at 300 degrees.
Place in squeeze container (I purchased mine for .99 cents or you can use an empty condiment bottle)
- While griddle is heating, place your pancake batter in the squeeze bottle. I recommend pouring directly into it using a bowl with a spout. I tried to use a small funnel but the batter was too thick and it was not going quickly.
Cook on skillet or griddle
- Butter your griddle. I like to take a stick of butter and just rub it directly on the skillet. Squeeze out the letter or number on the griddle. I like to draw the letter and then redraw it directly next to it (but still touching it) 2-3 times to make it thicker.
- Let it cook for 1-2 minutes prior to flipping.

- Unsalted butter: If you use salted you can omit the additional salt
- Honey: Adds delicious sweetness. Can easily sub for granulated white sugar
- Water: Allows the batter to come to the perfect consistency
- Vanilla Extract: For the perfect flavor
- Salt: Enhances the flavor
Toppings for letter pancakes
- Maple syrup
- Strawberries
- Blueberries
- Powdered sugar
- Chocolate chips
- Whipped Cream
Tips for making letters and numbers
- If the batter isn’t coming out of the squeeze bottle thick enough, clip the top slightly with scissors
- Use a an empty condiment bottle or BBQ sauce bottle instead!
- Flip each pancake carefully as they are more delicate

- I’d recommend adding some protein: sausage, chicken sausage, bacon, or ham.

What if the batter is coming out too thin out of the squeeze bottle? Snip the top slightly for a faster flow
How do I get the batter into a squeeze bottle without making a mess? I used a mixing bowl like this one with a spout for easier pouring. Be patient and pour slowly!
Where do I get a squeeze bottle? I purchased mine at Walmart for less than a dollar. Here are some on amazon, but they are more expensive.
What if I don’t have a squeeze bottle? Use an empty condiment or BBQ sauce bottle. Just rinse it out well!
How long to cook the pancakes? Mine cooked for 1-2 minutes per side at medium heat. Watch them closely as you want them to be lightly browned when you flip them. Some numbers are going to be more delicate than others so flip slowly and try not to flip them more than once.
What designs can I make? Some other ideas would be spelling out your child’s name (my kids have short names though!!), a heart, star, or flower.
