If you have not yet cooked a pork shoulder in the crock pot and used the pulled pork meat for different leftover dishes, you are MISSING OUT! The pulled pork meat is so versatile, and you can use it in a variety of dinner recipes. These leftover pulled pork tacos being one of them!
If you need a pulled pork recipe, this one is my absolute favorite. I’ve made it countless times, and it uses a dry-rub so you can season the leftovers with Mexican spices. Why do I like doing this? This way I can season half of the pulled pork with BBQ sauce after it’s done cooking and then do a completely different flavor profile, with Mexican spices so we don’t get sick of eating the same things.

How to make tacos out of leftover pulled pork
- Heat and season the meat: In a skillet on medium high heat, heat the pulled pork with 2 tbsp. of water. Sprinkle the spices on the pork: cumin, chili powder, paprika, garlic powder, onion powder, salt and pepper. NOTE: if your meat is already seasoned, you can skip this step. Just ensure your meat is warm when you place inside the tortillas.
- Toss the meat in the skillet until the meat is slightly crispy and warmed throughout
- Warm your tortillas slightly (10 seconds in the microwave). Line the center of the tortilla with the meat.
- Add on the toppings of your choice!

My kids love taco night, but it is all the more special and fun because of these taco trucks. Its a small thing, but it allows your kids to make and top their own tacos. So fun!

There are options of pulled pork at the store, however all of them I know of already are covered in BBQ sauce which I would not recommend.
Corn tortillas are typically a great size for these tacos (especially if you want gluten free). If using a flour tortilla, then fajita or street taco size works well.
Yes! You can sub out the individual spices for a store bought taco seasoning packet.
Yes, absolutely. Use your favorite dairy-free cheese and omit the sour cream.

- 1 lb. pulled pork cooked, without BBQ sauce
- corn or flour tortillas
- 1/4 cup water
Spices for pulled pork:
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon ground black pepper
- Optional Toppings: Cilantro lime sauce, Pico de Gallo, sour cream, shredded cheese, salsa, avocado, corn, cilantro
