Beef bone broth with soup bones
I always love having beef bone broth on hand. I can toss it into soups, stews or rice and I know my family is benefiting from all the marrow and nutrients. It adds the best flavor to dishes and can easily be stored in the fridge or freezer.
Ingredients
Beef bones: You can use a mixture of bones, ours were oxtail bones. They still had meat attached to them which is why this recipe includes roasting the meat at first. The roasting of the bones/meat adds so much flavor to the bone broth.
Water: To put in the instant pot
Carrot
Onion
Celery
Olive Oil: Used to drizzle the meat and vegetables prior to roasting
Apple Cider Vinegar: There is a small amount included this recipe and the purpose is for the vinegar to help extract the minerals from the bone. This is optional, but I recommend it!
Garlic
Salt and Pepper
How to make beef bone broth
Oven Prep
Preheat oven to 400 degrees and place soup bones and vegetables onto a roasting sheet. Try not to overcrowd. Drizzle with olive oil and sprinkle with minced garlic and salt and pepper
Roast in the oven for 15 minutes, flip the bones and roast for an additional 5-15 minutes. More time if there is more meat on the bones, Look for the bones turn a darker brown. You don’t want to roast too long that the meat begins to shrink up around the bone.
Instant Pot Prep
Place all the food from the roasting sheet into the instant pot. Add in 8 cups of water into the instant pot. Be sure not to overfill you instant pot! There is a line on the inside of the instant pot bowl that will show a “max fill”
Hit the “pressure cook” option and adjust the settings to “High” for 2 hours. Make sure your vent is secured shut.
My pot took about 30 minutes to pressurize, 2 hours cook time, and then allow the steam to release naturally for about 45 minutes – 1 hour.
Straining and storing
Strain the meat and vegetables from the pot. I used both a large colander and a fine mesh strainer (like this one) to remove smaller particles.
What is bone broth?
Bone broth is made from taking marrow-rich bones and simmering them in water to extract the marrow and nutrients. You can also add vegetables and spices for added flavor while you simmer the bones. Once the bones are done cooking, you strain out the meat, bones, and vegetables and are left with collagen rich bone broth. Earlier this year we purchased a quarter of a cow and selected to receive soup bones. These bones are the ones used in this recipe and were cut perfectly by the butcher to easily fit into an instant pot.
Why is bone broth good for you?
Compared to other stocks or broths, bone broth is more nutrient and protein dense. Bone broth is a great source of protein and is rich in collagen, calcium, magnesium, and phosphorus. A simple search on the world wide web can show many other claims of bone broth including supporting the immune system and helping to lower inflammation. Overall, bone broth is a healthy alternative to store bought stocks or broths.
Use this beef bone broth as an easy base for soups, stews, or in rice or mashed potatoes. Some people prefer simply to just drink the broth for health benefits.
Why I love using the instant pot
Making bone broth in the instant pot is much faster. Other recipes call for simmering the bones for 24 hours or making it in a slow cooker. Utilizing the instant pot makes this recipe much more practical for our family.
What is the fatty layer on top?
As the bone broth cools, a fatty layer of tallow develops on top. This is normal and typically beef soup bones contain more tallow than other animals such as using chicken bones. If drinking the bone broth some prefer to remove it. I prefer to leave it in and when heated it reincorporates in the broth.
Why do I need to roast before placing in the instant pot?
This allows for the broth to have a much stronger and delicious flavor!
Storing the bone broth
Store in the fridge for up to 4 days and in the freezer for up to 6 months
