Why Bake Without Eggs?
There are several reasons for eggless baking including:
- Egg allergies
- Egg sensitives
- Diet preference
- Eggs aren’t available
- Health or religious preferences
The purpose of eggs in baking
To best understand the purpose of eggs in baking, consider the two parts: egg white and egg yolk.
- The egg whites provide “lift” to a baked good. Especially when whipped, the egg whites can be a leavening agent. Egg whites also provide structure and stability. Lastly, egg whites contain a good portion of water, so they provide moisture in a recipe.
- The egg yolk provides fat content similar to butter or oil. They also provide some moisture.
Egg Substitutes for Baking
When I first started eggless baking, I used the typical swaps you often hear about such as ¼ cup of applesauce for one egg. Sometimes those universal substitutes work, but I want to offer another solution.
Over time, I’ve moved away from a one-size-fits-all approach. I now view each dessert as unique, and I believe the best results come from looking closely at the individual ingredients to determine the right substitution. Baking truly is a science, and each recipe turns out best when approached with its specific needs in mind.
Think about a cookie versus a cake – they’re completely different! That’s why I recommend stepping away from the idea of one universal egg substitute and instead focusing on what works best for each specific baked good. Start with any recipe on my website and take it one step at a time.

Baking tips
- Read the entire recipe before you begin: When you know the roadmap of where you’re headed, the whole process becomes so much easier.
- Use accurate measurements: For flour in my recipes, I recommend spooning it into a measuring cup then leveling it off with a knife. Better yet – buy a small inexpensive cooking scale and measure in grams! Gram measurements are always more accurate. Plus, it’s a fun way to feel like a professional baker.
- Use an oven thermometer: Wouldn’t it be nice if every oven was perfectly accurate? Unfortunately, the internal temperature of your oven can be very different from what the dial says. Grab an oven thermometer to know for sure!
- Avoid overmixing batter: This is one of the most common reasons for dense or tough desserts. Once you add flour into a recipe, mix until just combined.
- Use the step-by-step photos or the videos: My recipes include one or the other – often both! They’re there to guide you through each stage of the process.
Eggless Recipes to Try First
I always recommend starting with cookies. They are typically quick to make and are very forgiving with mistakes. For a majority of my cookies, I simply use milk as a substitute for eggs!
