This recipe truly is easy to make. The first time I ever prepared the cake, I did so with my three young children in the kitchen with me. If you have ever baked with kids, you know the chaos and not-so-exact measurements that happen. There was flour thrown out of the bowl while mixing and not-quite-full teaspoons of baking powder. But, in the end it still produced a soft, fluffy, and delicious eggless apple cake.
A perfect cake for those with egg allergies. It is an allergen friendly recipe by increasing the amount of flour typically used for structure and use of yogurt and oil for the soft and pillowy texture. To ensure the cake rises properly it uses a bit more baking powder than normal and apple cider vinegar.

How to make an eggless apple cake

Step 1: Dice apples and set aside.

Step 2: Whisk together flour, baking soda, baking powder, cinnamon, nutmeg and salt. Set aside.

Step 3: Combine sugar, oil, apple cider vinegar, vanilla, and yogurt. Whisk together.

Step 4: Pour flour mixture into the wet ingredients. Stir together. I find it easiest to stir with a silicone spatula. Fold in diced apples.

Step 5: Grease bottom and sides of cake pan. Line bottom with parchment paper.

Step 6: Spread out batter in pan. Top with sliced apples if desired. I recommend brushing the apples with melted butter to prevent drying out. Bake at 350 degrees in oven for 35-40 minutes.

Tips for Success
-Baking recipes will always be more accurate if you use gram measurements. This does require a small kitchen scale.
-Oil the baking pan on the bottom and sides. Place a circular piece of parchment paper on the bottom of the cake pan to ensure the cake doesn’t stick.

- 2 cups (270 g) all-purpose flour
- 1 ½ cups (187.5 g) red apples (2 small apples) peeled, cored and diced into 3/4cm cubes
- 1 apple peeled and thinly sliced to garnish the top of the cake
- ¾ cup (160 g) white granulated sugar
- 1 teaspoon (4 g) vanilla extract
- ½ cup (90 g) avocado oil or another neutral tasting oil
- ⅔ cup (170 g) plain yogurt or greek yogurt
- ½ teaspoon (2 g) apple cider vinegar
- 2 ¼ teaspoon (9 g) baking powder
- ½ teaspoon (2 g) baking soda
- ¼ teaspoon (2 g) salt
- ½ teaspoon (1 g) nutmeg
- ½ teaspoon (1 g) ground cinnamon
- Optional: powdered sugar to dust on top of finished cake
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl combine flour, baking powder, baking soda, salt, nutmeg, and ground cinnamon. Whisk together and set aside.2 cups all-purpose flour, 2 ¼ teaspoon baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, ½ teaspoon nutmeg, ½ teaspoon ground cinnamon
- In a large bowl combine sugar, oil, yogurt, apple cider vinegar, and vanilla. Whisk together until all ingredients are combined.¾ cup white granulated sugar, ½ cup avocado oil, ⅔ cup plain yogurt, ½ teaspoon apple cider vinegar, 1 teaspoon vanilla extract
- Pour in dry ingredients and mix. I find it easiest to mix with a silicone spatula. Mix until just combined, avoid overmixing as it results in a dense cake.
- Fold in diced apples.1 ½ cups red apples (2 small apples)
- Grease an 8-inch metal cake pan on both the sides and bottom. Line the bottom of the cake pan with a circle of parchment paper to ensure the cake doesn't stick.
- Pour in batter and smooth the top.
- Place sliced apples on top of the batter and gently press down. You can do any design you'd like. OPTIONAL: brush the apples with melted butter to prevent them from drying out.
- Bake in the oven for 35-40 minutes. Insert a toothpick in the center of the cake, if it comes out clean the cake is done baking.
- Allow to cool in the pan for 15 minutes.
- To remove it from the pan: Use a knife to run along the outside of the cake. Flip on a large plate. Place another plate on top of the cake and flip again so it is rightside up (see video below for a visual).
- Dust top of cake with powdered sugar if desired!
