I was first introduced to egg roll in a bowl when I was doing the whole30 diet. Let me tell you, there are many recipes I would not repeat that I tried on whole30, however egg roll in a bowl is not one of them. It is flavorful, filling, and a FAST dinner option. A typical egg roll has these same fillings, but covered in a fried wrapper. This removes the fried aspect and is still a delicious and healthy option.

- Ground beef
- Bag of coleslaw mix
- Sliced carrots
- Yellow onion
- Ground ginger
- Low sodium soy sauce
- Garlic
Optional toppings: green onions, sesame seeds, French fried onions

No, this recipe does not contain eggs. Typically with an egg roll, the egg is included in the wrapper. This recipe is egg free!
How to make egg roll in a bowl
- In a large skillet over medium high heat, begin to brown ground beef, breaking it into small bits as it cooks
- About 2 minutes into cooking ground beef, add the carrots and onion
- Cook until the ground beef is no longer pink and carrots have softened a bit
- Add ginger and garlic and cook 1 minute
- Add in soy sauce and bag of coleslaw (you may have to add the coleslaw in smaller portions and wait for some of it to cook down before adding more so it all fits in the skillet)
- Cook approx. 4 minutes until the slaw cooks down
- Remove from heat. Top with green onions or sesame seeds
- Serve over rice, quinoa or cauliflower rice
Whole30 egg roll in a bowl
For this recipe to follow whole30 guidelines, make sure to use coconut aminos instead of soy sauce. Also, serve over cauliflower rice, chopped lettuce, or within a lettuce wrap.
Substitutions
Ground Beef -> ground turkey or ground chicken
Soy sauce -> Coconut aminos (if you are following whole30 or working to avoid soy)
How to serve egg roll in a bowl
Serve it over: Rice, quinoa, or cauliflower rice if you want to “bulk” it up a bit
Toppings: Green onions, sesame seeds, or teriyaki sauce. If you are not gluten free, French fried onions or wonton strips add a tasty crunch
How I served it for my kids
This is how I served the dinner to my toddler and preschooler. I don’t know about your kids, but mine always prefer for their foods to be separated a bit. I also served with some homemade ranch and soy sauce to “dip.” Having dips always makes a meal a bit more fun for them!

Storing and reheating
This stores well for up to 4 days in the fridge. When reheating, I would add extra soy sauce (or coconut aminos) as it does tend to dry out a bit.

- 1 lb. ground beef (can sub for ground turkey or chicken)
- 1 bag (16 oz.) coleslaw mix
- 1 cup carrots sliced thinly
- ½ yellow onion diced
- 1 tbsp. ground ginger
- 4 tbsp. low sodium soy sauce (or coconut aminos)
- 2 tsp. garlic minced
Instructions
- In a large skillet over medium high heat, begin to brown ground beef, breaking it into small bits as it cooks
- About 2 minutes into cooking ground beef, add the carrots and onion to sauté and soften
- Cook until the ground beef is no longer pink and carrots have softened a bit
- Add ginger and garlic and cook 1 minute
- Add in soy sauce and bag of coleslaw (you may have to add it in slowly in separate portions and wait for some of it to cook down before adding more so it doesn’t overflow the skillet)
- Cook approx. 4 minutes until the slaw cooks down
- Remove from heat. Top green onions or sesame seeds
- Serve over rice, quinoa or cauliflower rice
