Having meals on hand you can quickly throw together with basic pantry staples is SO helpful! This hamburger soup contains simple, yet delicious ingredients – ground beef, potatoes, and vegetables. These ingredients are combined with delicious spices, canned tomatoes, and broth to simmer together into a hearty and healthy soup.
Hamburger soup is creamy and a perfect comfort food. It pairs so well with salad, crispy bread, or as a stand alone meal. Soup is always so delicious on a colder evening, however this week has been in the 70’s and my family still gobbled it up. As an added bonus, this recipe is both dairy free and gluten free. It is also whole30 and paleo approved.
Earlier this year we bought a half of a cow (half beef) so we have an abundance of ground beef. Ground beef is one of my favorite proteins to cook with as it is quick to thaw from the freezer and cooks quickly. I have been looking for easy and delicious meals to use ground beef in and this recipe meets that mark. Ground beef perfect protein source and base for this soup.
Ingredients in easy one pot hamburger soup
- Ground beef: I like to use a lean ground beef for less excess grease to drain
- Potatoes: Peeled and diced. You can use white, yellow or red potatoes
- Carrots: I prefer full sized carrots peeled and diced. If you are looking for an easier option then baby carrots will do.
- Celery
- White Onion
- Beef Broth: I used homemade beef bone broth (recipe here!). Store bought beef broth works just as well.
- Canned Green Beans
- Canned Tomato Sauce
- Spices: Garlic, Dried Parsley, Salt, Pepper
How to make one pot hamburger soup
To begin, peel and dice your potatoes and carrots. Chop your onion and celery into thin slices.
Over medium heat, brown ground beef and onions in a large pot or Dutch oven. Add garlic and sauté for 1 minute. Once the meat is browned, drain excess grease. I like to use lean ground beef in this recipe to minimize the need to drain grease.
Add diced potatoes and vegetables into your pot. Sprinkle in the dried parsley, salt and pepper and then mix all ingredients together.
Next, add in the can of tomato sauce and beef broth. Bring to a boil and then reduce to a low heat to simmer uncovered for 10-15 minutes. You will know when the soup is done when the potatoes and carrots are soft and you can easily pierce with a fork. If your potatoes and carrots are in larger pieces you will likely need to add more cook time.
You can mash some of the potatoes to make the soup thicker, or add water to thin it out a bit. This is based on your liking.

How to store hamburger soup
Store in the fridge in an airtight container for up to 4 days.
This soup also freezes well. Place into a freezer safe container for up to 3 months. When ready to eat, thaw in fridge overnight or remove from freezer container and heat in a large pot over medium low heat.
Can I use baby carrots in hamburger soup?
I have prepared this soup with baby carrots before. I would recommend cutting them half so they do not take as long to cook.
The soup is too thin, what should I do?
Simmer an additional 5 minutes. Another option is to mash some of the potatoes to thicken.
The soup is too thick, what should I do?
Add an additional 1/2 cup of water or broth to thin the soup out a bit
