These burritos can be prepared ahead of time (all in 1 skillet!!) and either placed in the fridge or freezer for later. This meal prep breakfast brings ease to the rest of the week. It prepared 5 large burritos and they were gone within 24 hours at my house!
Breakfast has been a bit of a challenge to figure out for our family. We have multiple food allergies including eggs. So whether or not its an egg allergy or dislike of eggs in general, this egg free breakfast burrito is for you! It has been a fun challenge to find meals and adapt them to the needs of our family. Breakfast burritos have always been a favorite of mine and they seemed “off-limits” for a long time as they typically include eggs. This recipe allows everyone in the family to enjoy them and when prepared ahead of time, it makes breakfast so easy!
Ingredients
Flour tortilla: Burrito sized
Southern hashbrowns (frozen): Also known as diced hashbrowns. You will find these small, cubed potatoes in the freezer section. They really bulk up the breakfast burrito.
Ground pork sausage: The protein element of this meal to keep you fueled up all day long
Yellow onion: Delicious flavor
Sharp cheddar cheese: The cheesy goodness is amazing flavor and also helps bind the ingredients together.
Spinach: a simple, nutritious ingredient
Paprika
Garlic powder
Salt and Pepper
Additional items for storage: Gallon-sized Ziplock bags and aluminum foil
PRO TIP: Buying a block of sharp cheddar cheese and shredding it fresh has much better flavor than a bag of shredded cheese.
How to make breakfast burritos without eggs
- In a large frying pan, brown the ground pork sausage until no longer pink, breaking it into chunks as you cook.
- Remove the sausage and set aside (leave the excess grease to cook potatoes in)
- Add frozen southern hashbrowns
- Top with spices (paprika, garlic, salt and pepper)
- Cook according to package instructions (typically it is cooking for 5 minutes, turn and cook an additional 5 minutes). If potatoes begin to burn or stick, add an additional tablespoon of butter.
- Once potatoes are cooked, add in spinach. Cook for about 1 minute until the spinach is wilted.
- Add sausage into the skillet with the potatoes.
- Divide the skillet ingredients evenly into 5 tortillas and top with cheese.
- Fold the top and bottom of tortilla and then wrap tightly.
- Wrap uneaten burritos into foil and then a Ziplock bag to store in fridge.

FAQ
Can I cook in the ground sausage and hashbrowns in 2 different skillets? Yes, to cook this meal faster you can use 2 skillets. You will not have the sausage grease for the potatoes though. Be sure to follow package instructions and add enough butter or oil to cook the potatoes in.
What are other vegetables can be added? Bell peppers, mushrooms, and jalapenos are good options.
Can I put the salsa in the burrito? If you are eating the burrito right away, yes. However, do not add it inside the tortilla if you are going to store for later. The water from the salsa will make it soggy.
Additional toppings
Salsa, sour cream, hot sauce, and avocado would be excellent toppings for these burritos!

Freezing the breakfast burritos
These burritos freeze well and can be saved for later use. Wrap each burrito with aluminum foil and place inside a gallon freezer Ziplock bag.
When reheating, remove the aluminum foil and reheat on 50% power for 4-5 minutes. (High heat toughens the pork.)
