Eggless Blackberry Baked Oatmeal

This eggless blackberry baked oatmeal is a healthy, easy breakfast. It is bursting with fresh blackberries, oats, and warm spices. It is beyond easy to prepare using simple ingredients.

Equipment

1 large mixing bowl
10" x 10" baking dish

Ingredients
 

  • 12 ounces fresh or frozen blackberries
  • 2 cups old fashioned oats
  • 1 ¾ cups whole milk
  • 3 tablespoons ground flax seed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • cup Maple syrup or brown sugar
  • cup plain greek yogurt
  • 2 teaspoon vanilla

Instructions
 

  • Preheat oven to 350 degrees and lightly oil your baking dish to prevent sticking.
  • In a large mixing bowl combine all ingredients EXCEPT blackberries.
    2 cups old fashioned oats, 3 tablespoons ground flax seed, 1 teaspoon ground cinnamon, 1 teaspoon baking powder, ¼ teaspoon salt, 1 ¾ cups whole milk, ⅓ cup Maple syrup, ⅓ cup plain greek yogurt, 2 teaspoon vanilla
  • Stir until well combined. Set some of the blackberries aside to top the mixture prior to baking. Gently fold in the rest of the blackberries.
    12 ounces fresh or frozen blackberries
  • Spread the mixture in the baking pan.
  • Top with additional blackberries. Bake for 45-50 minutes.
  • You want the center to be set and the edges start to turn a golden brown.
  • Allow to cool for a few minutes. Top with additional blackberries or maple syrup!

Notes

Watch the bake time: Ovens can vary drastically on their internal temperature. Also if you are using a metal baking dish, decrease the baking time as metal heats faster.
