Instructions
Place all ingredients in a blender. Blend until well combined, about 30 seconds.
Heat griddle or skillet to medium low heat. If using a griddle, I typically heat to 350 degrees.
Butter the surface. I like to take a stick of butter and rub it directly onto the skillet.
Using a 1/4 cup measuring cup, scoop the batter onto the skillet. Cook for 1–2 minutes per side, or until golden brown and cooked through.
Top with additional maple syrup and enjoy!
Notes
Can I make this recipe dairy free? Yes, use your favorite dairy free milk. I would omit the melted butter that goes into the pancake batter. Cook the pancakes on a neutral tasting oil (olive or avocado).Be sure to use old-fashioned oats, NOT quick oats.What if the batter is too thick? Add additional milk, one tablespoon at a time.What if the batter is too thin? Add an additional 1/4 cup of oats and blend again.
