Cottage Cheese Avocado Toast

Ingredients
 

  • ¼ cup cottage cheese
  • ½ avocado
  • ¼ teaspoon everything bagel seasoning
  • 1 slice of sourdough bread
  • ¼ teaspoon honey
  • ½ tablespoon butter for toasting bread in a skillet

Instructions
 

  • Toast a slice of sourdough bread. I like to toast bread in a skillet with 1/2 tablespoon of butter.
  • Slice an avocado lengthwise and remove the pit. Thinly slice the avocado while it is still in the skin. Use a spoon to gently scoop it out of the skin.
  • Spread cottage cheese on top of the toast.

  • Sprinkle on everything bagel seasoning and drizzle on honey.
  • Enjoy immediately!

Notes

More delicious toppings: Fresh dill, sliced cucumber, diced tomatoes.
To find a ripe avocado: Give it a gentle squeeze with the palm of your hand. It should not feel overly firm or overly squishy/mushy.
