Equipment

1 serving platter
1 cutting board
1 paring knife

Ingredients
 

  • 10 ounces cherry tomatoes
  • 1 cucumber
  • 1 large yellow bell pepper
  • 12 ounces fresh broccoli florets
  • 1 lb. baby cut carrots
  • 2 slices provolone cheese For the letters "K" and "C."
  • Optional: Dipping sauces (ranch, hummus, dill dip)

Instructions
 

  • Start with building the middle design using the yellow bell pepper for the outline. I used a small pairing knife to cut the bell pepper. The outline required 9 pieces of bell pepper in total.
  • Fill the center with cherry tomatoes.
  • Slice out the letters "K" and "C" using provolone cheese and arrange them on top.
  • Surround the rest of your platter with additional vegetables. If you have room, you can place the dipping sauces on the platter. If not, place them on the side!

Notes

Get extra slices of provolone cheese if you don't trust your letter cutting skills! Then you have some "mess up" ones.
Dips to serve this with: Ranch, hummus, honey mustard dip, dill dip.
