Ingredients
 

  • 1 lb. (about 3 cups) Fresh Green Beans (washed with the ends trimmed)
  • 6 slices Bacon (chopped into small pieces)
  • 1/2 cup yellow onion (diced)
  • 1 tbsp garlic (minced)
  • 1 tbsp salted butter (olive oil for dairy free)

Instructions
 

  • Begin with washing your green beans and trimming off the ends
  • Blanche the green beans: In a large pot of water, bring the green beans to a boil for 3 minutes. Drain and rinse under cold tap water to cool the beans down. You can skip the blanching step, but it really creates a more tender green beans.
  • Cook your bacon and onions: Add your chopped bacon and onion to a skillet over medium heat. Sautee until the bacon is crispy and the onions are soft. This will take about 7-8 minutes. Stir frequently to prevent burning.
  • Remove the cooked bacon and onion, leaving the excess bacon grease to cook your green beans in
  • Sautee green beans: Add the butter and green beans to the bacon grease skillet. Sauté for about 4 minutes until the beans are soft. In the last minute of cooking, add your minced garlic
  • Serve immediately!

Notes

Store for up to 4 days in the fridge. Reheat on stovetop to avoid mushy green beans from the microwave!
