32ouncecan of pineapple chunks (you will use the pineapples and juice from the can)
1green bell pepperdiced
2teaspoonscornstarch mixed in water to work as a thickener for the sauce
1tablespoonwaterfor mixing with the corn starch
1teaspoonminced garlic
Instructions
Prepare the sauce: Separate the pineapple chunks and the juice, placing the juice in a small bowl for the sauce (it should be about 1 cup of juice)
Add the rest of the sauce ingredients (ketchup, brown sugar, and soy sauce) to the pineapple juice. Stir to combine
In a medium sized skillet over medium heat, add the minced garlic and sauté for about 1 minute until fragrant
Pour in the sauce to the skillet and bring to a low simmer
Mix cornstarch and water in a separate container (it is 2 tsp. of cornstarch and 1 tbsp of water to serve as a thickener). Stir it in the sauce to begin thickening.
Add in the green bell pepper and meatballs
Cover and simmer on low heat for 10 minutes, stirring occasionally
Add in the pineapple chunks and cook for 1 minute
Enjoy!
Optional - Serve over cooked rice, quinoa, or cauliflower rice
