This easy hamburger and potato soup is quick, healthy, and packed full of vegetables and protein. The soup is filled to the brim with savory ground beef, juicy vegetables, and hearty potatoes.
2largebrown potatoespeeled and diced into 1/2 inch segments
18 oz.can of tomato sauce
114.05 oz can of green beans
6cupsbeef brothor bone broth
2clovesgarlicminced
2tsp.dried parsley
1tsp.salt
1tsp.pepper
Instructions
To begin, peel and dice your potatoes and carrots. Chop your onion and celery into thin slices.
Over medium heat, brown ground beef and onions in a large pot or Dutch oven. Add garlic and sauté for 1 minute. Once the meat is browned, drain excess grease.*
Add diced potatoes and vegetables into your pot. Sprinkle in the dried parsley, salt and pepper and then mix all ingredients together.
Next, add in the can of tomato sauce and beef broth. Bring to a boil and then reduce to a low heat to simmer uncovered for 10-15 minutes.** You will know when the soup is done when the potatoes and carrots are soft and you can easily pierce with a fork.
You can mash some of the potatoes to make the soup thicker, or add water to thin it out a bit. This is based on your liking.

*Using lean ground beef will require less excess grease to be drained**If your potatoes and carrots are in larger pieces you will likely need to add more cook time.Store in fridge for up to 4 days in an airtight container and freezer for up to 3 monthsTop with cheese, sour cream, green onions, crackers or hot sauce!To make soup thicker, simmer an additional 5 minutes or mash some of the potatoes.
