Preheat oven to 425 degrees and line baking sheet with parchment paper
In a large bowl toss the diced sweet potatoes with olive oil, salt, and pepper.
2 large sweet potatoes, 2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon black pepper
