Buffalo Chicken Salad (No Mayonnaise)

Equipment

1 medium mixing bowl

Ingredients
 

  • 1 lb. shredded chicken you can use a rotisserie chicken
  • ½ cup celery diced
  • cup red onion diced
  • ½ cup carrots diced
  • 1 cup plain Greek yogurt
  • 1/3 cup buffalo sauce
  • 1/2 teaspoon garlic powder

Instructions
 

  • In a medium sized bowl combine Greek yogurt, buffalo sauce, and garlic powder. Mix until well combined and set aside.
  • In a large mixing bowl, place shredded chicken, diced onions, celery, and carrots.
  • Pour in sauce and toss together.
  • Serve with your favorite chips, on a lettuce wrap, or inside a sandwich.

Notes

Store leftovers in an airtight container in the refrigerator for up for 4 days. 
The level of spice will depend on the buffalo sauce you add. Make it mild to spicy based on preference.
