Super Soft Dinner Rolls – No Mixer Needed

The perfect companion to any meal are these super soft dinner rolls – no mixer needed. They are light, buttery, and so tasty. They only need 6 ingredients and require no use of an electric mixer.

There is just something special about fresh baked bread out of the oven. The aroma of these super soft dinner rolls will fill your home and your whole family will love them. I promise, these do not require expert kitchen skills!

These fluffy dinner rolls only require 6 ingredients and the dough is made all in one bowl. They do require some time to make, but most of that is allowing the dough to rise.

Serve these golden brown dinner rolls alongside soup, a Thanksgiving dinner, or Christmas dinner. You can also use leftover rolls to make lunch or breakfast sandwiches!

  • Whole milk: the extra fat of whole milk adds delicious flavor
  • Unsalted butter: I always prefer to use unsalted butter when baking
  • Active dry yeast: This allows the rolls to rise to fluffy perfection
  • White granulated sugar: helps to activate the yeast faster and adds a bit of sweetness to the rolls
  • All purpose flour: If you are looking for soft and fluffy dinner rolls I highly suggest using all purpose flour.
  • Salt

How to make dinner rolls without a stand mixer

Make the dough: In a large bowl place the warmed milk, sugar, and active dry yeast. Whisk together and let sit for about 5 minutes until the top is foamy.

Add in salt and melted butter. Whisk together.
Add in flour 1/2 cup at a time. Whisk together and then switch to a silicone spatula when it becomes harder to mix. After you have added 3 1/2 cups of flour, you can slowly add up to an additional 1/2 cup until you get the right consistency. You do not want the dough to be too sticky and stick to your hands while kneading.

Knead the dough: Move the dough to a lightly floured work surface to hand knead. Knead the dough by hand for about 5 minutes.

How to know when the bread has been kneaded enough? I perform the “windowpane test”. Take a golf ball sized piece of dough and gently spread it apart into a thin, translucent membrane. Hold it up to a window and if you can see light through it, it has been kneaded enough. If the dough tears instantly and does not stretch out, knead for a few additional minutes.

Let the dough rise: Place the dough in a large greased/oiled bowl (use cooking spray or cooking oil). Cover with plastic wrap and allow to rise for 1 to 2 hours until it has doubled in size. My house was 69 degrees and took 1 hour to rise.

Form rolls: Form into equal sized balls and place into a greased or parchment lined 9×13 inch baking pan.

Second rise: Cover the rolls with plastic wrap for the second rise. Let the dough rise again until puffy. This will take 30 minutes – 1 hour. My house was 69 degrees and took 30 minutes to puff up.

Preheat oven to 400 degrees

Bake the rolls: Bake at 400 degrees on the middle rack for 11-15 minutes.

Brush with butter: Brush 1 tablespoons of melted butter onto the rolls. Enjoy every bite!

Tips for success

  • Add the flour 1/2 cup at a time. Once you have added 3 1/2 cups of flour, add up to an additional half cup a little bit at a time. This will help you get the right consistency.

Yes, I have made this recipe in a glass dish before. Glass does take a bit longer to heat up so they may need a bit longer to bake.

Yes, you can use a lower percentage (2% or 1%). Make sure its warmed before you add it into the recipe!

You can prepare the dough the day before. Complete through step 6 and do not complete the second rise. Cover the baking pan with plastic wrap and place the rolls in the fridge. You will want to remove the rolls the next day and give them about 3 hours at room temperature to puff up. Then you can bake as instructed.

Ingredients
  

  • 3 ½ – 4 cups all purpose flour
  • 1 ½ cups whole milk heated to 110 degrees. You want it warm to the touch. I microwave mine for about 1 minute.
  • 4 tablespoons unsalted butter melted
  • 1 tablespoon active dry yeast
  • ¼ cup white granulated sugar
  • 1 ¼ teaspoon salt
  • 1 tablespoon additional melted butter to brush on the rolls after baking
