What do I use as an egg substitute in holiday cookies?

These recipes are designed to be 100% egg-free – no egg substitute needed. But if you have a well-loved recipe that you want to modify, I recommend using 2 ½ tablespoons of whole milk (38g) or plain whole milk yogurt for every egg you remove. Read more in my egg substitute guide for cookies!

What does chilling the cookie dough do?

This allows the flour to absorb moisture and allows the butter to harden so it melts less in the oven. This helps the cookie spread less, have a richer flavor, and change the texture. If the recipe says to chill the dough, I really wouldn’t skip it!

Can I freeze the dough or baked cookies ahead of the holidays?

Tips for baking holiday cookies without eggs

1. Use a Small Kitchen Scale

A kitchen scale is one of my favorite tools for baking, especially when you’re making egg-free cookies. Measuring ingredients by weight is more accurate than using measuring cups, which can make a difference when you’re working with dough that doesn’t have eggs to provide structure.

If you do not have a kitchen scale, follow this tip when measuring flour: Spoon the flour into the measuring cup and level it off. Do not scoop directly into the flour.

2. Follow the Recipe as Written

Egg-free baking isn’t always as simple as removing an egg and adding a substitute. Eggs provide moisture, structure, and sometimes lift, so the ingredients need to work together to create the right texture. For the best results, follow the recipes as they have been well tested!

3. Don’t overmix flour

Once you add the flour into a recipe, mix until JUST combined. If you overmix the dough, this will create dense cookies. So don’t turn that stand mixer on and forget about it : )

4. Chill the Dough When the Recipe Calls for It

Chilling cookie dough can make a big difference, especially with egg-free cookies. It helps firm up the butter and gives the flour time to absorb the moisture in the dough. If a recipe calls for chilling, don’t skip this step! It can help prevent cookies from spreading too much in the oven.

5. Keep an Eye on the Bake Time

Every oven can vary quite a bit in its actual internal temperature, even if the temperature gauge on the outside says it’s at the correct temperature. Some ovens run hot while others run cool.

Start checking your cookies at the earlier end of the recommended baking time. You don’t want to overbake them, especially because cookies will continue to bake on the hot baking sheet as they cool.

6. Let Cookies Cool Before Moving Them

Let them cool on the baking sheet for the amount of time recommended in the recipe before transferring them to a cooling rack. Once they’re cool, they’ll firm up and be much easier to handle.
